Superbowl cupcakes 2014; seahawks and broncos

Even though the puppy bowl was more exciting than Peyton this year, these cupcakes were a hit!

For the cupcakes:
•1 box devil’s food cake mix
•3 eggs
•1 C. milk
•1/2 C. oil
•1 C. sour cream
•1/2 t. vanilla extract
Preheat oven to 350°. Comibe all ingredients, mix with hand mixer for 2 minutes. Pour into lined cupcake pan and bake 15-18 minutes. Cool completely.

For the decorations:
•1 bag sweetened coconut
•food coloring
•chocolate frosting
•white writing icing
Divide coconut on paper plates (I did half the bag for blue, and a quarter for each green and orange) add a couple drops of color and mix with a fork to break up the chunks, add a few more drops if nessasary to get desired color.

Then let your creative juices flow. I perticularly love the OMAHA! and the skittles that look a little like eggs in a seahawks nest.



Triple chocolate boozy cupcakes, filled w strawberry whipped cream and topped w hand dipped chocolate strawberries


For the cupcakes:

•1 Box devil’s food cake mix
•1 C. Sour cream
•3 Eggs
•1/2 C. Chocolate milk
•1/2 C. Chocolate liquor
•1/2 C. Oil
•1 t. Vanilla extract

Preheat oven to 350°. Whisk together sour cream, eggs, chocolate milk, chocolate liquor, oil and vanilla extract. Add cake mix and stir until well blended. Spoon into cupcake liners and bake 15-18 minutes, when toothpick comes out clean. Cool completely.

For the strawberry whipped cream filling:

•1 C. Heavy whipping cream
•1/3 C. Sugar
•1 t. Vanilla extract
•6 T. Chopped/processed strawberries

Chop strawberries in a blender (4-5 large strawberries worked for me). Beat whipping cream and vanilla extract until it starts to thicken. Mix in sugar. Fold in strawberries.
Cut out a small section in the center of cupcake (save in a bowl). Fill hole w strawberry whipped cream. Replace tops (the best you can, or leave them off).

For the frosting:

•1 Can Chocolate fudge frosting
•1-4 T. Powdered sugar
•1/2 t. Vanilla extract

Beat frosting, vanilla extract and 1 T. powdered sugar with a hand mixer.. continue adding 1 T. powdered sugar and mixing until you get desired consistency. Pipe frosting onto cupcakes with a 1M tip.

For the chocolate dipped strawberry:

•24 Large strawberries, rinsed and dried
•1 3/4 C. Semi sweet chocolate morsels
•2 T. Vegetable shortening

Line baking sheet with wax paper. Microwave morsels and shortening, uncovered, on 70% power for 1 minute. Stir, if necessary microwave another 10-15 seconds, careful not to burn the chocolate. Dip strawberries about 3/4 of the way, let excess chocolate drip off. Place on baking sheet, refrigerate until set. Place on top of frosted cupcake.
